Shake Tizon on it

Start with what is already on your counter. Each of these has a recipe or a short how-to on this site.

What goes into a Tizon shake

Read the jar and the flavor sorts itself into three parts: salt and sour up front, a savory base underneath, and the heat of Fuego on top.

  • Heat

The spice on the label is where the fire comes from. Lumbre means fire, and the Fuego jar is made for people who like a snack that bites back.

  • Salt and sour

Salt leads the ingredient line and citric acid follows close behind. That sour side wakes up fruit and cuts through anything fried.

  • Savory

Onion powder, MSG and yeast extract make the base that lets the same jar work on wings, fries and popcorn, not just on fruit.

Duran Carne Seca · Lumbre

Tizon carne seca: thin, crisp, dusted in fuego

Carne seca is the dried beef of northern Mexico, cut thin and dried until it snaps. Ours comes from Duran Snacks in Fort Worth, Texas, made under USDA inspection at establishment 4188, and every strip is dusted with the same Lumbre powder that is in the jar.

It needs no fridge before you open it, so the 2 oz pouch rides in a truck console, a gym bag or a desk drawer. Tear the notch, eat a few strips, press the zipper shut.

It is the one meat snack in the Tizon lineup, and the one to pack when you will not have a jar with you.

Shake it on

Where Tizon goes first

Three places people start. Each page has its own recipes and the dose that works there.

  • Fruit

    Tizon on fruit

Fruit is the first place most people shake Tizon. Mango and watermelon bring the sugar, the powder brings heat and sour, and a squeeze of lime in between makes it all stick.

  • Snacks

Tizon on popcorn, chips, nuts and corn

Popcorn is the second thing everyone tries. The trick is warmth and a little fat: shake Tizon onto popcorn straight from the pot, tossing the bowl as you go, and the powder lands on every piece.

  • Grill

Tizon on wings, fries and the grill

On the grill and in the oven, Tizon goes on at the end. Wings, fries and grilled meat take a shake the moment they come off the heat, while the surface is still hot enough to grab it.

How much Tizon to shake

The label counts one serving as one gram. That is a light, even dusting, and most snacks need about that much.

  1. 1

    A bowl of popcorn

Toss the popcorn while it is still warm and shake as you toss, so the powder sticks instead of falling to the bottom of the bowl.

  2. 2

    A cup of cut fruit

Squeeze lime over the fruit first. The juice gives the powder something to cling to, then shake over the top and stir once.

  3. 3

    Cucumber or jicama spears

Pat the spears dry, then roll the cut sides in a little powder on a plate. Wet spears turn the powder into a paste.

  4. 4

    Corn on the cob

Butter or mayo goes on first, Tizon second. Turn the ear as you shake so the powder lands on every row.

  5. 5

    Wings and fries

Season right after they come out of the oven or the fryer. Hot surfaces hold the powder, cold ones do not.

  6. 6

    Watching your sodium

Each gram carries 122 mg of sodium, so count your shakes the way you would count salt. The sodium guide has the arithmetic.
